Goats, Love and Cheese
The goats at Noble Springs Dairy not only provide the wonderful milk our cheeses are made from, they are responsible for the partnership of Dustin and Justyne.Dustin Noble grew up in the Brentwood area. His family owned and managed Noble's corner in Brentwood for many years. When he was a little boy, his brother Christian was allergic to dairy products. A family friend suggested to the children’s parents to have Christian try goat milk. The family borrowed two goats for a fresh milk supply. So in 1982, Dustin’s journey with goats began.
Dustin’s fiancé, Justyne McCoy, grew up in the small town of Tonganoxie, Kansas. In 1996, her mother got her two Alpine Dairy goats for a 4-H Project.
As they got older, Dustin and Justyne began to enjoy working with goats and competing at local and national shows. In Des Moines, Iowa at the 2003 American Dairy Goat Association National Show, both Dustin and Justyne happened to be showing their goats and met for the first time. The two exchanged emails and kept in touch. They both realized it doesn’t happen every day that you meet another young person that has the same unique hobby.
In 2006, Justyne moved to Tennessee and began attending school at Middle Tennessee State University. Justyne brought with her five of her Alpines. In the winter of 2007, they decided they wanted to do more than just show the animals. They wanted to construct a Grade A licensed dairy and cheese processing facility. Some family friends, Calvin and Marilyn Lehew, caught wind of the duo’s idea and invited them to come build a new goat dairy complex on their 230 acre farm outside of Franklin. In February 2009, Dustin, Justyne, the 70 goats, 2 Great Pyrenees, their little rat terrier Bubbles, 12 chickens, and their two horses moved into the farm house out on the farm. The dairy parlor and processing facility was under construction. After many headaches and sleepless nights, the building was finally completed in July 2009.
A Dutch cheese maker helped the couple make the transfer from hobby cheese making to commercial cheese making. In the beginning of August, Noble Springs was finally licensed and able to share their delicious goat cheeses with the public.
